Not sure I believe some of these leaks... they all look like rather early revisions.

I've been told this morning that although the phone is going to launch next Thursday, it won't be available to buy until July. ... somehow I don't believe that one either

If its not an earth shattering upgrade from the current GS2, it will be interesting to see if Samsung can blag the tech world like Apple have previously.

There isn't anything to shatter the earth to. By that I mean smart phones are now a the stage PCs were 2-3 years ago where nothing was new,but everything just kept getting faster and faster. NFC is a while off being a fully functional payment method, yes it'll be realised and 4-5 companies will take it up, just like 3D TV.

As long as the don't mess up the design too much it'll sell due to the success of the GS2, it's really now down to the App makers. If they start rolling out Apps that really kill single/Duel core processors then Quad core is the only way.....

But realistically, how many people will want good quality photo editing on their 4' screen?

That's precisely my point. Since the original iPhone, in my opinion the successive models haven't been as earth shattering. Yet Apple always seem to market their products as if they are, which is always amusing. As Samsung have clearly taken the fight to Apple, it will be amusing to see if they have ripped a few chapters out of Apple's marketing manual too.

What can they really add to make the S3 better?

Superior audio chip (the one they used in the S2 was inferior to the Wolfson chip in the S)
HD screen
NFC
Faster processor (that's not really needed?)
Bigger battery

Although I constantly gripe that the iphone screen is too small, I hope they don't go the other way and make the S3 screen larger. 4" is the optimal size IMO and the S2 is already too large and too thin. The Note is a great device but a monstrosity as a phone. hope the S3 doesn't end up even bigger and thinner than the S2 with no consideration given to battery life.
